The Rhubarb Cooler



Using some leftover rhubarb compote, I made rhubarb simple syrup. (1 cup water, 1 cup sugar, stirred over heat til the sugar dissolves, add rhubarb compote, let steep. Strain.)

Then I used that to make this drink:

1 1/2 oz gin
1/2 oz lime juice
1 oz rhubarb syrup
Some crushed mint

Shake, strain, serve over ice. Delicious!
