I found cauliflower on sale at the farmer's market, so I turned it into a quick, hearty side dish. (I've also made
roasted cauliflower with paprika.)
1 head cauliflower, broken into florets
3 slices of uncooked bacon, in bite-size pieces
3 cloves of garlic, peeled and cut in half
Olive oil
Toss everything together and drizzle with olive oil. Roast at 375 for 15-20 minutes, or until the cauliflower is starting to color and the bacon is crisp. Salt and pepper to taste.
