Bell pepper sauce



This comes in three different colors, and all can be made in the microwave. These are excellent with grilled meats and fish.

Green pepper sauce:
2 tablespoons olive oil
1 chopped leek
2 minced garlic cloves
1 chopped green pepper
1/4 cup chopped fresh basil
1/2 cup chicken stock

Cook oil in a 2-quart container in microwave for 2 minutes. Stir in rest except pepper, microwave 3-4 minutes. Add pepper, cook for 4 minutes, covered. Puree till smooth.

Yellow pepper sauce:
2 tablespoons olive oil
1 small chopped onion
2 tablespoons fresh thyme
1/2 teaspoon sugar
1 chopped yellow pepper
1/2 cup chicken stock

Cook oil in a 2-quart container in microwave for 2 minutes. Stir in rest except pepper, microwave 3-4 minutes. Add pepper, cook for 4 minutes, covered. Puree till smooth.

Red pepper sauce:
2 tablespoons olive oil
1 small chopped onion
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
1 chopped red pepper
1/2 cup chicken stock

Cook oil in a 2-quart container in microwave for 2 minutes. Stir in rest except pepper, microwave 3-4 minutes. Add pepper, cook for 4 minutes, covered. Puree till smooth.
