Oh yes, leftover
fried okra can be made into a salad.
1/2 red onion or bunch of scallions, sliced thin
1 tomato, diced
your leftover
fried okra
maybe some cilantro
Combine those, and add this vinaigrette:
1/4 cup white vinegar
1/4 cup sugar
1/2 cup blended oil (25% olive oil, 75% canola oil)
Boil vinegar and sugar together to dissolve sugar. Bring to room temperature, and whisk in the oil.
Toss everything together, and serve.
