Butternut squash and black bean pizza

Looks kinda like a Jackson Pollack painting, doesn't it? Eat your art!

Remember those butternut squash pockets? Well, I had some butternut squash goop left over after making them. I also had some leftover black beans in the refrigerator. So I made a pizza out of them.

pizza crust
butternut squash, roasted and chopped
black beans
sliced peppers
feta cheese

Also would have been good on this pizza:

caramelized onions
goat cheese
parmesan cheese
salsa

Layer as you see fit. Bake at 475 for 15-20 minutes.

  1. So, is there anything you won't use as a topping on a pizza ? Serious eats had a survey recently on which toppings were dealbreakers. 'Looks like you've gone wayyyyy beyond the usual dislikes of green peppers, bbq sauce and chicken. Don't much care for olives on pizza myself - bad (drinking) experience once involving olives.

  2. @Mike: I saw that article! And so far, there isn't anything I wouldn't consider on a pizza. I find it useful to think of pizza toppings less as "toppings" and more "what would go well with bread and cheese." :-)
