Roasted beet, barley, and feta salad
More fun with beets!
1 cup pearl barley
4 medium beets, roasted, peeled and diced
1 shallot, minced
a big block of feta, crumbled
juice of one lemon
1 tablespoon olive oil
Cook the pearl barley. Combine all. Serve hot or cold.
