Roasted beet and peach salad with pistachios

Otherwise known as: Greatest Salad Evah!

(Ignore the pecans in the picture. Imagine pistachios in their place.)

Green lettuce
1-2 roasted beets, sliced thinly
1 big peach, peeled and sliced
Goat cheese
Shelled, salted pistachios

For the dressing, I used olive oil and my mother's blackberry vinaigrette.
